Sous Vide from Frozen

Not sure if this is the correct category for this question or not. I am new to sous-viding (is that a word? it is now!) and am wondering if you can use frozen meat with the Joule without thawing first. Anyone try this?

Yes! Just add some extra time to the cook (if you use the built in app guides, it'll ask you if your food is frozen and pick the right time for you). I keep individual portions of steak and chicken w/ herbs in my freezer and just drop one or two into the water bath when I get home from work.

The Joule app has an option for cooking from frozen. Select the thickness, mark it as frozen, and the app will adjust the time for you.

Absolutely, that is one of the great things about sous vide. As Jack said you just have to add time to the cook. If you are using the Joule app most of the guides have a selection for fresh or frozen and will figure the time for you.

I generally check mine with a ThermaPen to make sure. But sous vide will tend to make you lazy, e.g., put the meat on for an hour-long cook, then fart around on the phone or making side dishes for an hour and a half, and nothing is overcooked. Every time I've double-checked with the ThermaPen, the temp has been right where it was supposed to be. Remove; dry off; sear; serve; bask in compliments. Life is good.
