Hi folks, been in the food and wine business (on & off) for the past 30 yrs.
Interests include BBQ & smoking; sausage making & curing; Italian/Spanish/Med food.
Now want to expand my knowledge into candy making.
Does any one have a ratio recipe for making pectin/starch based firm jelly candies they could share (pref vegan/vegetarian friendly)?
Also interested in prolonging "shelf life" of this sort of candy w/out artificial or SO2 based preservatives.
