Best sauce with chicken?

In your opinion what's the best tasting sauce that goes best with chicken? What your favourite? How will you make it?

Personally I love a reduced white wine, chicken stock and cream sauce like a fricassee.

Or when I felt like have something simple I just dip pieces of chicken in Sriracha or chinese garlic lime chilli sauce or just sweet dark soy sauce. Simple and nice.

I like a healthy combo of sriracha and Greek yogurt as a dip or mayo substitute on a sandwich. Also can't beat homemade peanut sauce using peanut butter, soy sauce, hot water to thin it, and sriracha or another chili paste for heat. Can also throw in some fresh scallions once you get the texture right.

While a Marsala is always good... for me, there is nothing like a tart Piccata sauce.
