Ultimate Chocolate Cake

I've followed the ChefSteps recipe and the cake turned out great. The only change I've done was to reduce the sugar by 40% (in general CS recipes have too much sugar or salt for my taste so I tend to reduce it), the cake was very moist and succulent. It took me about 4-5 hours from start to finish, but I had to bake each cake separatelly so that added up a bit extra time.

Whoa, that's a significant reduction. Do you think it affected the texture?

I don't think so, it could be that the cake is a bit softer because of that but it holds up pretty good. I forgot to mention that I eyeballed the quantity of hot water I added to cake batter to achieve the same texture as on video, and definitelly didn't add the whole 340ml.
