Tried out the Chefsteps thyme oil recipe, but with rosemary. Any thoughts on how to put it to good use?

I would do a woodsy sort of theme. I see that and instantly forest moss comes to mind - not to mention the pney flavour. I think mushrooms. Maybe a mushroom rissotto, but indtead of arborio or carneoli rice, maybe a long grain wild rice (grows in swamp forest areas). Wild mushroom infused beef stock instead if chicken. Top it with a few drops of truffle oil and a generous dose of the rosemary oil.

Maybe a vinegarette, oven roast potatoes, drizzled on a white pizza, rubbed over lamb, a splash on some good minestrone.Just some thoughts.
