Hello, I am a Gelato maker and first of all I wanna Thank the whole Team for such amazing videos and things you guys do. I want to know in detail about, How to poach a fruit for my Gelato making. For Instance I want to poach a Pineapple so that they lose all the water content in them and I have a Juicy soft Pineapple which can be added with my Gelato. What are the possible Methods like: braising, double boiler, any equipment, etc, I want to get them 100% right. Cheers.!!
