I was kept busy in oct-dec, hence didn't post or interact much. The last two weeks have been a cooking frenzy, and these are only some of the dishes.
1) carmelized cashew cake.
2) Bûche de Noël. Banana and hazelnut. Made a smaller version of Christina tosi's banana cake(with a few changes), made some dehydrated milk foam for the snow.
3. Eleven Madison park (EMP) granola
4. French laundry pine nut crust lemon tart
5. Sous vide lobster(with joule , of course), with lemongrass sabayon. Got a new toy for Christmas, whipping siphon

6. Étouffée with bay scallops
7. Crispy skin salmon, mushroom top, mushroom duxelles, saffron broth, avocado foam(guacamole inside a whipping siphon, so good!), and crispy salmon skin.
8. Top sirloin, savory granola, parsnip puree, currant sauce and oat bubbles. Inspired by a venison dish from the Alinea book.
9. Chefsteps soup dumplings.
10. Galette des rois(king cake) with homemade puff pastry (6 folds of fun
