Thanks, Here you go!
Ice Cream Base:
250ml whole milk
250ml heavy cream
60ml honey
150g sugar
50g powdered milk
4 ea. (80g) egg yolks
Banana Lime Puree:
350g Overripe Banana flesh (Hack to overripening quickly: Roast unpeeled Bananas for 30 min at 400F until shiny black, let cool and proceed)
Zest of 2 Limes
60 ml of Lime Juice
Banana Lime Puree
Puree Banana, Lime zest and Lime juice in large bowl using hand blender. Refrigerate.
Ice Cream Base:
Combine everything but Powdered milk and egg yolk in sauce pan. Over medium heat bring mix to 95F. Add egg and milk powder and blend with hand blender until totally incorporated. Continue to cook, whisking constantly until mixture reaches 185F. Kill heat and strain ice cream base into bowl containing chilled puree. Blend with hand blender until smooth and incorporated. Chill in ice bath. Once chilled age the ice cream base in fridge overnight. Churn using dry ice, LN, Ice cream Machine or Paco Jet.
