Baby Back Ribs

Hi, I just got the Joule and I want to smoke some baby back pork ribs then finish them sous vide so they are tender and delicious. I plan to smoke them for 2 hours but then how long and what temp in the sous vide?

I do mine at 167'F for four hours (quick version) and smoke at 165'F for one hour. They are already cooked you just need to get some smoke flavor.

I would reverse the order: first in the water bath and then smoke it

Same. Not sure if there's any substantive difference, but I do prefer it this way.

I do the opposite way. smoke adhere more to raw meat and you can get the smoke ring if that's important to you. After that I'm cooking 60-65C for 48-72h. You'll discover that smoke smell and color go through the plastic bags...
