Dairy Free Gelatos

Hi, I'd love to make the dairy free gelato dishes showcased on the Chep STeps recipes pages but am unable to source lambda carageenan in Britain and Modernpantry.com will not ship here. Is there a replacement ingredient I can use. I can source Kappa and Iota but I am guessing the carrageenans have different characteristics and are not interchangeble.

That's kappa carrageenan, but the diary free "gelatos" need lambda.

Sourcing iota and kappa carragenan in the UK, or in the EU for that matter, is no problem. Sourcing lamda is. Special Ingredients only sells iota and kappa, but not lambda.

(Btw, ordering directly from Special Ingredients is a tad cheaper than through amazon.)

When I put 400g lambda carrageenan into the shopping cart, went to checkout, selected checkout as guest and gave an email address, then the next step was filling out the shipping info, where there was a "United Kingdom" entry in the "Country" drop-down list. Now, merely selecting it didn't do anything... However, after filling out all the required fields with random data the site updated the "Shipping Method" area on the right with international shipping options.
