More Savory Pickles?

I tried the ChefSteps pickle recipe for Joule, and they were fantastic. Only problem is that the savory recipe was a little too sweet. Any suggestions on adjusting the proportions of salt and sugar? Is the sugar necessary at all?

I would experiment with maybe cutting back on the sugar. They really look great.👍

You can alter the recipes any way you see fit. I have made ChefSteps pickles a couple times, but prefer traditional pickles which involves nothing but salt and water. Play around with it, and find something that suits your tastes.

Out of curiosity -- at what point did you taste the pickles after doing the initial cook? I could just be imagining things, but I thought that the brine tasted sweeter after a couple weeks. My assumption was that the salt concentration equilibrated between the pickles and brine while the sugar remained largely in the brine. If correct, it also suggests that the final flavor of a given batch could vary a bit depending on the vegetable/brine ratio and the water content of the vegetables. I try not to overthink it though -- every batch has always turned out to be delicious.
