Egg Frittata recipe

I am looking for an egg white frittata recipe, or even.a whole egg egg frittata recipe. Does anyone have a suggestion. I can only find poached or scrambled recipes. Starbucks has just launched a sous vide egg bites offering. The egg white with gruyere selection is really very good. ...I am hoping the community may have some ideas on how to replicate it.

Not to be snarky, but if you Google the word "frittata," you will find dozens and dozens of recipes. Likewise if you search for "egg white frittata."

In case you need a frittata-recipe - just add soms herbs/ veggies/ fish/ cheese/ meat to a bunch of eggs (I use 7-8 eggs for a large frittata, serves 2). Use your imagination! Bake on low heat, flip it over or finish in the oven until it has the texture you're looking for. In case of success, plz share results.

If you want to replicate the Starbucks gruyere egg bites I can't help you. I never go there.

I know what a frittata is. I'm asking what Carol is referring to because she said "I can only find poached or scrambled recipes." when poaching or scrambling, that usually indicates that you're using the whole egg. I don't think I've seen a single recipe out there that designates itself as a whole egg frittata, just a frittata or an egg white frittata. The question remains: what does Carol mean when saying a "whole egg frittata"?

Starbucks has a new line of sous vide egg white fritattas. The question (I presume), is how do we as chefsteppers go about making these little bites at home? I was also wondering myself yesterday but realized I would be reheating them in the microwave at work anyway so the texture gains would be likely lost.

I am specifically looking for a Sous Vide recipe for Frittata. It can either be egg whites only or the whole egg. Please look at the Starbucks offering "Sous Vide Egg Bites" to see what I am referencing. I know that there are lots of standard recipes out there, but not one for doing the 'frittata' sous vide.

I fail to see what your reference of the Starbucks sous vide egg bites has to do with your search for a sous vide frittata recipe. If you had indicated you were looking for a sous vide frittata recipe in the first place, that probably would have helped clear up a lot pic confusion regarding you're post. Sis you try to Google it? I googled "sous vide frittata", there were 4 recipes on the first screen. Good luck.

I would suggest using 4 ounce mason-type jars. Olive oil or butter to coat the inside of the jars then layer your ingredients, put the lid on the jars and sous vide. Time and temp are a big factor but a good jumping off point would be 85°c/13 minutes. Allow the egg to rest at room temp for about a minute (jars will be pretty hot to the touch anyway), then take a look at what you've created. If you only use whites you might have to adjust the cook time, depending on what texture you're looking for.

By the way, I don't 'do' Starbucks. Taking a look at the list of ingredients would insure I continue that trend....

There's a somewhat crappily made YouTube SV frittata recipe that cooks everything in a gallon Ziploc at 170F for 45 minutes. Texture seemed decent from what I could tell. It comes out like a sliceable "log." Pre-cook your vegetables (obviously).
