Hi! I've made the chicken breast a few times and live the tenderness of it. I'm wondering if anyone has experimented with marinades or sauces while cooking the chicken. I'd love to add more flavor to it.

I've used fresh thyme in mine along with a pat of f butter. The butter probably only flavours the sauce. I've also rubbed the breast with Prudhomme Poultry Magic. Tasty stuff. If you like a little heat try Slap Yo Mama seasoning. I do my chicken breast with skin removed but on the bone for extra flavour. (Bones are good for that.)

I still haven't gotten bored with salt and olive oil. My family just stands around picking at it while I'm shredding it. Usually wind up losing half the product before dinner...

I brine for at least an hour in a salt/sugar with fresh thyme, lemon zest plus juice, bay leaf, pepper, fresh rosemary mix that's been heated/chilled... into fridge. Put the herbs from brine and a little bit of olive oil maybe a garlic clove lightly crushed into the cook bag. When done sear in a stainless or carbon pan so you get some fond then deglaze with strained bag juice.. butter.. pan sauce
