Why use Cake Yeast?
If you could explain more about the fermantation process.
Why not just put the dough info the fridge and wait a couple of days? Why first room temperature and then fridge?

cake yeast is a live yeast and the fridge would not lend itself to the fermentation process. Similar to making a starter, done at room temp it gives the bacteria a temp it can use during the growth/proofing stages.
