More about thickness ... if you pound that meat out thin and it would cook faster than a baseball shape of the same weight. The joule app in some of the guides asks how thick of cut you're going to cook.

Yup, all about thickness, a 5kg cut of beef that's 5cm thick would cook exactly the same time as a 2kg cut of beef the same thickness.
