Ideas that microwave well

Howdy Chefsteppers,

My department at work (~50 people) is having a potluck on Friday and I'm looking for ideas of things that reheat well in the microwave, as that's the only appliance I'll have at work. My current thinking is short ribs in some sort of sauce, but I've never actually tried reheating short ribs with the microwave.

Does anyone have experience in this area who could lend some ideas/tips?

I wouldn't want to have to microwave anything for 50 people, but Johan's suggestion of carnitas is a good one. As a southerner, I can vouch that pulled smoked pork shoulder is a good option for something that's simple to cook in large amounts off-site and then reheat via microwave in large-ish batches. Short ribs aren't a bad idea, but only if they're braised (since low-temp ones won't reheat well in the microwave) but with a braise, you'll basically be serving stew to people (which may or may not be a bad thing).

Ha ..I got pulled away before I could comment but exactly what Johan said 👍 I always do two shoulders because it freezes so well then I can take a pouch out for tacos etc.. anytime! It's the only meat that's allowed in the nuker! Maybe a braised chuck with appropriate south of the border flavors pulled apart.

Another idea I just had would be BBQ, along the same lines as carnitas. To help a bit with the whole microwave situation I could heat the meat more gently/not all the way hot and then nuke a sauce or pork stock reduction pretty hard and use it to help heat through the meat more evenly.

Are you cooking for 50? How many servings are you supposed to make, will other people be making food?

Also, do you have exclusive use of the microwave or will a bunch of people want to use it?

Anything braised or slow cooked is your best bet. Also rather than trying to feed 50 people with a microwave, go for something that can be served at room temp/chilled. Rillettes, salmon or pork? Finger sandwiches? Crostini?
