Looks great. How are you doing the lemon puree?

Meyer lemons so, blanch a little and puree. Can also do without the blanch but a bit bitter for my taste. If using regular lemons you can PC cut lemons once 15min, scoop out the flesh and repeat with just skins. Sweeten (or not) as desired w/ simple syrup.
