A new grocery store opened near my house and they had fantastic sales opening weekend and I bought a bunch of stuff. So, Ive been on a sous vide spree lately. Tonight was steak.

Just seared for 2-3 min or so per side. Both pre and post. There was a little trick however. Use a sharp knife to cut micro lines (not too
deep) into the surface and they'll fry up in the oil.

Not sure what temp you're asking but sous vide was 129.
