I just received my joule and I read that I can use my phone and start the joule from work. My question is , if I am at work for 8 hours and want to start the joule an hour before I leave work, is it safe for example to leave a steak in the container with water and the joule for 7 hours before starting ?

only if ice and water in container maintain temps at safe levels. Alternatively, start remotely and heat steak or protein when you get home.

You will want to keep the temperature of the water and your food at or below 40'F. You can do this by using a 50% ice in your container with cold water, even a bit longer if your food is frozen. You can monitor the temperature from the app from anywhere you have wifi or data. Just click on the orange start button and it will show you the current temperature, Joule just needs to be plugged in and sitting in the water bath. I have found that in a small cambro type container that mine with hold for 6 to 8 hours before I need to start cooking. You can usually leave the cooking protein in the circulating water for an hour or two beyond when it is done without much if any change to the texture or doneness.
