Veal Brisket

Hello, I have a boneless veal brisket I'd like to pop in the Joule. I know Veal cooks a lot faster than normal beef. Any recommendations on modifying the Smokerless Brisket recipe?

I have not done this so this is just my recommendation. As veal also has less fat, I would use a lower temperature like 130° for 12-24 hours. Then finish the same as the smokeless brisket.
