Can anyone recommend a ready made (liquid, powder or cube) stock for use in a small restaurant for when time doesn't allow it to be made fresh?

I'm a big fan of the More Than Gourmet products, which are produced using Escoffier's recipes. They can be used full strength as a glacé or demi for saucework or diluted down for use as ordinary stock.

I'll add that Minor's chicken/beef/pork "bases" are sort of industry standards for stock replacers in restaurants that need to cut those particular corners. However, their bases contain things like salt, sugar, and MSG (and their partner nucleotides) that make them more difficult to use in saucework, since insufficiently diluted base will be overseasoned. And as someone who has nothing against MSG or other artificial-ish flavorings, that's something I prefer to add on my own. If you do go for Minor's, opt for the low-sodium versions.
