Sear Chuck
3 lbs of Potatoes
Mirepoix 2-1-1
2 Cups of Onions
1 Cup of Carrots
1 Cup of Celery
I always put a little more of everything
Add the Demi glaze & 1 quart of water
Convection at 275 F for 3 Hours or Meat is at 200 F
Probe into the chuck
Ready to cook
Done
Serve with a Side of Sweet Potato Puree
