Granted, it depends on what the fluid is from, but what i usually do is cook it down with wine or booze and make a pan sauce, or use it in a vegetable mash. I have used it to cook down onions and mushrooms.

I sous vide pork shoulder. I added a rub, so some of the liquid is flavored.

I liked Grant's method of cooking it down to almost pan fond, like he did in the rib roast video on FB. Sometimes I reseal the bag and put it in the fridge so I can de-fat it collect a few and make demi.

Yeah, I used to nuke it to coagulate the proteins and then strain before using it in a pan sauce, but I've switched to Grant's technique. I'm still not sure what to do with the bag juices from my pulled pork. That has a pretty heavy spice rub and a wee bit of sodium nitrite in it.
