hey quick question - anyone cooked a rack of ribs as per CS recipe (4hours) and then finished from cold? Those Super Bowl ribs I made need eatin today and unsure how best to finish.... assuming a good 20 mins in the oven with finishing rub would do it?

I do the four hour recipe a lot, every time I can get ribs on sale. I cook, ice bath and freeze them. When I want ribs, I reheat them via sous vide at 150°F , then put them on the smoker for about 30 minutes. So I would reheat via sous vide.

I finish in the oven too, and sometimes under the broiler. It works quite well. Sous vide ribs are super easy. It's my favorite part. Also, I often do 10-12 hours. Largely because I can set it up at 8pm, let them go over night and take them out in the morning.
