Valentines day dinner-Surf and Turf-Table top-Steamed crab via Joule (68C) with Modified fat duck sand (sound of sea) - added parsley, lemon, capers, brown butter and toasted quinoa powders. baby octupus (oca heads with fresh pasta tenticles), rib eye chunks, carrot logs (nixtamalized carrots), jerusalem artichoke stones. Surf was shellfish stock and steamed crab jus foam (white wine and aromatics tied to steamer basket). lemon tart and pecan or chocolate gelato (as requested).
