1) Parsnip or parsley-root?

2) what's the white veg disk under the blue potato at 7 o'clock? Looks too white to be potato.

3) is that color blue on the tater for realz?

Parsnips and rutabaga are the root veggies I did brighten up the photo I took but yes the blue, purple and red potatoes are typically bright in color.

So I have had mixed results doing Parsnip sous vide. There's an unpleasant volatile.

I roasted the parsnip and all the other veggies in the oven.. only cooked the chicken with the joule.
