I haven't done testing or anything with that particular cut. But I got to believe you'd be ok in the 4-6 hour range without much worry. I've done other steaks that long without a problem. Is there a particular range you were trying to reach for easier planning purposes?

I did one yesterday for fajitas and it was in for 8 hrs at 139. Sliced seasoned and seared and was fine. It is my favourite way of doing flank
