amazing cake recipe, but I found vodka/sugar syrup too sweet for my taste, but the actual cake is soooo perfect.
I was about to make it but ingredient check showed no canola oil, and my 3x 9" cake tins were missing their bottoms.
Ended up using a single square 9" cake tin and added 15min to cooking time
For fats I started with olive oil, but ran out of that, added some unsalted butter, and finally copha melted in microwave (vegetable fat shortening made from hydrogenated coconut oil and soybean lecithin) the Copha in fridge was 2 years past Best before date, but following my grandma's advice "they didn't have expiry dates on food in my day" it showed no sign of spoilage, and I've lived to tell the tale...
Had no cake flour on hand so used plain flour with ~1tbs per cup removed and replaced with corn flour.
Was lazy and didn't bother with any decoration or icing, just served with whipped cream infused with a hint of maple syrup. The next day cake was really perfect. My kids said it was the best cake they ever had...
