Reheating 1/2 roasted chicken (frozen)

have a frozen 1/2 roasted chicken need to defrost/reheat, have in sous vide bath now at 140 degrees, for how long do I cook/reheat, how do I know it's done? Is 140 the correct temp?

I cook my chicken at 165. Typically you reheat at about 3 to 5 degrees less than cook temp so you might want to lower that temp to 160-162. Again, reheating typically takes about half an hour or maybe a bit longer for thicker cuts that aren't frozen so you'll have to add a bit of time. All that being said, if it were me I'd have the temp set at 160 and cook off for about an hour to an hour and a half. You can check the internal temp of the chicken after that to make sure it's heated through.

as long as the reheat temperature is less by 5°F or so than what the food was originally cooked at, you should be fine.

You can reheat at 140° F if you want, the important temperature is that it is above 130° F (40°F-130°F is the danger zone). As stated below it is best to reheat at a temperature lower than it was originally cooked at. It takes almost as much time to reheat/re-therm as it does to cook it originally, from frozen add about 30 minutes. Check it with a thermometer and make sure the center core is at temperature. As I have no idea the size of the chicken I can't tell you how long that will take but I would guess about 2 hours.
