This got started when my wife and 1 yr old and I were in Chinatown yesterday. In addition to pork belly and shins, I stumbled on a whole cold-smoked uncooked duck for $18. My wife laughed at me cuz it was in a bright red and yellow cellophane package. (She's no longer poking fun at me after tonight's dinner).
First I quartered the bird.
Then I took a breast quarter, removed the skin, did the meat at 56 C for 1 hr and crisped the skin in the oven at 375 F. The skin got chopped up to sprinkle all over later, and I figured jackfruit would offset that salty fatty goodness.
A bed of arugula, a mound of sous-vide barley (1 cup done 1.25 hr at 85 C with 2 cups of a beef broth I made from last night's rib-eye trimmings and pan gunk after searing), mandolined raw purple carrots and some holy basil was all. No dressing.
My wife's plate I prettied up (above). She won't eat bell peppers. I threw some chilled (skinned, 85 C 1 hr) into mine and then just tossed it all.
