Sealing bags or not?

The instructions on sealing or not sealing the ziploc bags are confusing on your site and recipes. The videos seem to show the bags being left unsealed. What is the rule? Thanks!

It's really up to the discretion of the cook. Some softer foods, like fish, you might want to use a gentle vacuum on, but you can so either or. I find there's no real difference in most cases. As long as, if you're using as open bag, you make sure the open end keeps out of the water, you're good. Hope that helps

The Archimedes principle. With an open bag, as you place the food in the bath, displaced water comes up around the food and pushes the air out of the bag. It's not a vacuum, but it gets the job done.
I've been cooking improvised sous vide like this for four or five years, and I don't own a sealer.
