Glucose syrup

You guys use glucose syrup a lot. I can't buy it over here in Poland. Can I just use powdered glucose instead? What % of glucose is in the syrup? Could I just mix water and powder in 4 to 1 ratio, bring it to boil and use as syrup?

Hmmm, in theory DE42 or DE48 glucose syrup means its 42% or 48% glucose (dextrose) equivalent. Diluting in water would probably work sonetimes, but in reality there are longer chain sugar molecules in the syrup rather than just water. In Poland I would suggest you look for confectioners syrup as it is regularly used by those who make candy.
