Making milk from cream

Hello dear people from the world.

I was wondering if it is possible to make milk from cream. I mean, cream is made from milk, where the fat percentage is different. So I think if you add water to cream, it would lower the fat percentage. So then I am curious how much water this would be.

I'd tend to doubt it. Cream is made from milk, however, it's not just having the water removed. Cream is basically skimmed from the top of unhomogenized milk, that has been allowed to separate. In industrial practices, often centrifugal separators are used. To make milk from cream, you'd probably have to remove a certain percentage of the fat, rather than just diluting it. If you did want to add water to the cream, you'd probably want to add a certain amount of evaporated, non-fat milk powder to it as well. I suspect if you mix cream and just water, you're going to get a very watery cream, rather than milk. If you play around with this, please let us know your results.

Neither milk nor cream consist only from fat and water, both contain proteins and sugars (lactose), too. According to the nutritional info of the cream I have on hand it contains 30% fat, 3.2% sugar and 2.5% proteins. In my milk these are 3.5%, 4.8% and 3.4%, respectively.

By adding water to cream you could lower the fat percentage to match that of milk, but the resulting mixture will contain way less protein and sugar than milk.

What difference this makes in practice, I don't know.
