That sounds really good. You made your own ricotta? And if so, can you elaborate? I love cheese!

Yup. So simple. 2 liters of whole milk (not ultra pasturized), 1/2 tsp citric acid or 1/3 cup lemon juice and 1.5 tsp salt. Bring the milk to a simmer (200F), add salt and citric acid and remove from heat and let sit for 10 mins. Check with a slotted spoon (curds should be seperating from the whey). Pour through a fine mesh sieve lined with cheesecloth and squeeze out excess moisture. If it is too sty, and back a few tsp of whe6 and mix in to desired creaminess. I like to grate in some lemon sezt and finely mined basil and garlic when using in the lasagna.
