Couscous ratio (by weight)

Hey guys,

This may be stupid question, but does anyone have a water/stock to couscous ratio by weight? By volume, I have seen ratios between 1:1 and 2:1. I bought couscous in bulk, so I would much rather pull out a scale for measuring over measuring cups.

Any help is appreciated. Thanks!

What does the couscous you bought have as for preparation instructions?

depends on the type of couc cous, and texture etc that you want. 2:1 is the ratio I typically use

I would advise making a couple batches in those ratios to determine what works best for what you have. In general there is probably sound advice, but it might not be ideal for what you have. Start with measuring the volume recommended and then just weight it.
