Part way through the dinner Saturday evening, some of the guests were asking about the foam (nitro-poached margarita) and while describing what could be done with the siphon from foaming to infusing, it hit me.....what if I infuse the watermelon with tequila and make a margarita flavored foam and the guest can then treat it like a fondue. Using the chamber and siphon, it's about as easy as it gets.
