It does take a bit of practice to get a good sear, doesn't it!? And it looks like you nailed it! Good job....and lovely plating too!

I watched the chefsteps live yesterday and sort of related to Grant saying he is more about getting a good crust than having the picture perfect edge to edge doneness. I just happened to be cooking that chop right after I heard that!
