I just saw that stick-of-butter-style ice cream on the yelp page for Gordan Ramsay's Steak in Vegas (where I just made a reservation for a trip in April.) Any chance that's your inspiration? Or is this being done all over now?

There is quite a bit of butter in those bad boys hahaha.

I did not use Gordon for inspiration. I have a few silicon sheet molds from JB Prince that I used to shape the lemon sabayon. Let me know if you would like recipe!

You are correct, this style of plating desserts is being done all over. Albeit in various shapes.
