Should work great. I went to culinary school in Thailand. I recommend exfoliating the chicken skin with salt and rubbing it with a lime, then rinse off the salt. It makes the skin much more tender and flavorful. Add some green onion and cilantro stems (they use the root but unless you grow your own they are hard to find here) to your bag.
