I noticed on the video of the BBQ Short Ribs that the video says set the water bath to 185 but when reading the recipe it says 158. Which one should I use? Thanks.

Regular smoked technique

That doesn't answer my question. There are many factors that impact texture when barbecuing or smoking meat: time, temperature, direct/indirect heat, meat wrapped or not, type and grade of ribs, humidity in the smoker, type of wood (though this is related to the temperature), etc. There's no such thing as "regular smoked technique". And the picture has absolutely nothing that relates to the texture.
