Heston's shrimp cocktail served in avocado shell (not sure why I've never tried that before. no dishes :-). Ribs -finished on grill with creamy polenta and aerated polenta flour biscuits. vanilla cinnamon ice cream (ala minute) with praline apple crumble. The polenta for both the puree and the siphon/microwave bread was done using polenta flour (LN2 handy for this), corn butter and corn milk. So much fun figuring out how to add more of he same flavor and the different vehicles to get there.
