Every time I see pho, I want pho. Did you have some extra broth laying around or do you have a quick weeknight recipe?

Just happen to be making a couple litres of beef stock, so strained and used 1/2 of it. Pressure cooker with make your stock life easier. :-) I'm forever making stock it's almost part of a weekly routine. I try to have brown chicken stock on hand at all times and at least 500g of beef, pork and shellfish stocks. Veal and Chicken stock are what I would consider my mother stocks but veal bones are harder to come by so although I ususally have some, I save it for paid guests or special occassions.

I'd call that fully stocked, and I admire your routine. I'm happy to have anything homemade on hand, let alone multiple options.

Thanks Bob, I started with Keller's stocks and having made the 3 day veal stock on a few occassions, I came across heston, the pressure cooker, then chefsteps and fell down a stock hole. LOL.
