looks great and I love the idea of smoked flour in there! can I ask for the pasta dough recipe? how much smoked semolina?

I cold smoked semolina for 30 minutes, gently mixing a couple of times. I made
this recipe
, using the smoked semolina. The durum flour was not smoked. I've now made the capunti recipe several times. It produces a dough that is very easy to work with, and cooks up nicely.
