One of my go-to meals that can be made in about an hour with minimal effort. It's braised chicken stew with veggies. The broth is super rich and spicy. Good with noodles or rice or just by itself.

2-3 lbs of chicken, a mix of dark and white in larger chunks.
2.5 pints of stock
2-3 chopped carrots
diced potatoes or sweet potatoes
a sliced onion
mushrooms of your choice
4-5 cloves of garlic, minced
small knob of ginger, minced
a bunch of scallions, sliced
1 red chili, sliced
a paste made from:
2 heaping tbsp gochujang
1-2 tbsp gochugaru, or as much as you like for heat
1/4 cup soy sauce
3 tbsp honey
2 tbsp sesame oil
1 tbsp fish sauce
black pepper
Brown the meat in a couple of batches and reserve, then add the garlic, ginger, chili and whites of scallions to sweat. Add the paste and stock and bring to a simmer. Add the chicken, potatoes and carrots and simmer until cooked through and tender. Then add the sliced onion and mushroom. Cover and simmer for about 10 minutes. As soon as the onions and shrooms are cooked, but not yet mushy, it's done. The broth will be thickened slightly, and should be well-balanced in salt, sweetness and heat. I like it best with udon or rice noodles.
