The lobster this time steamed them, when I have more time and not on a catering job would like to play around with time / temps with the Joule !

Stephanie gorgeous. I love butter poached lobster with Joule. I like 137°F for 25 minutes, my preference. Kenji has a nice article on times and temperatures at serious eats.
