Experiment - last part.. the smoker

Last part of the experiment on its way. Getting ready for the smoker. Will be cold smoking it for 6-8 hrs. Glad I listen to you pd3ski and did it because the colours are amazing.

I use Ruhlman smoked salmon method. After 48 hrs of curing, I soak the salmon in the beets and purple cabbage juice for about 5-6 hrs. (I use a juicer) Removed from juice and let it sit on a wire rack uncover in the fridge over night. Cold smoke and let it sit again overnight uncover in the fridge to let it air out. (It removed the bitter smoke flavour)
