Beautiful! Is it quite sweet with the caramel sauce?

The caramel is actually pretty spicy due to sambal and Sriracha, with a nice balanced sweetness. Here is the recipe:

110g Brown Sugar

100g Unseasoned Rice Vinegar

65g Sambal olek

25g Sriracha

25g Fish Sauce

10g Lime juice

Combine all ingredients and reduce by half. Strain into another sauce pan and thicken with ultrasperse to reach caramel consistency. season with lime and sugar to taste
