Creme de chocolate

I made the creme de chocolate today and while the texture was great the flavor was too chocolate and not sweet enough in my opinion.
Would it be wiser next to use a more common milk chocolate than the 70% one suggested? Any other suggestions?

what type of dark chocolate did you use? I don't have asweet tooth and prefer the dark chocolate so for this, my kids are the barameter and they prefer the dark over milk chocolate. You could try a 64% cocoa and see how you like it.

. I like it more than my kids.
I used 70% scharfen Berger bittersweet chocolate. I'm thinking if I used typical dark milk chocolate the texture would be the same and the flavor more sweet and kids friendly.

I would still drop it to the 56-64 semi-sweet range instead of the 30-35 range (milk). scharfen Berger has a 62% that works well in brownies and cookies and such. Ultimately your call (obviously). :-) I'm still laughing that your tooth is sweeter than your kids! LOL

My kids tooth is sweeter. I enjoyed it a little. They really weren't into it.
I'll try both the 62% and the milk chocolate and we shall see

I tried it with the 62% semi sweet scharfen Berger and added 25% more sugar than the recipe calls for.
This one came out great!!!
