Beef tongue recipe ?

Anyone have an idea about temperature and timing for a whole beef tongue? Also if you do, do you strip the tough outer layer off first or just cook the whole thing and remove after cooking?

Kenji says 170 F for 24-48 hrs, peel it afterwards. He adds cilantro, onion, tomato, and fat to the bag. (
