Hi, I have a small Vietnamese restaurant in Brighton, UK. I am obsessed/half-crazed with getting each and every one of my recipes exactly as it should be! I am nearly there, save for one dish - Bun Cha. Bun Cha should be super smokey, super fatty beef on a kebab with noodles and pickled vegetables.
I know that the missing ingredient is the smokey, char flavour that I can only get from a real bbq, but I only have a tiny, tiny open kitchen in the restaurant (I do have a larger prep kitchen in the basement). I run only on electricity too, so there is no gas.
In my addled brain, I believe I am looking for a small briquette bbq that I can safely use in my open kitchen. But, I cannot find such a wondrous thing. I need it to be no bigger than a mac airbook in footprint. Help me, help me oh titans of the cooking world! Please point me to a solution before I finally lose it and make one myself (this won't be pretty or effective or safe)....
